SNAIL CAVIAR “Caviar d’escargot”
The Snail Caviar or Snail Eggs are called Caviar d’escargot (and even White Caviar) in France, its commercial name is “Perles de France”. They come from the Gros-Gris species (Helix Aspersa Maxima).
With good-sized grains and a fine whitish skin, they’ll surprise even the most demanding plates. They are delicious on their own, as part of sophisticated recipes, or even on toast.
It possesses a subtle flavour with aromas of mushroom, heather and bark. Taste of the caviar is exceptional and incomparable.
